Vegan, Alcohol-Free Eggnog Recipe

Ingredients

  • 3 cups non-dairy milk (almond, coconut, or soy milk work best, but another creamy milk would also work)
  • 1 14-oz can of coconut milk/cream (the good, creamy stuff is best)
  • Monk fruit powder/monk fruit drops/stevia powder/stevia drops, to taste
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1 tsp Rum extract (optional)

Instructions

  1. In a medium size saucepan, pour in the non-dairy milk and coconut cream. You may add up to 1/2 cup of water if you prefer your eggnog a little less creamy, or even up to 1 cup if you wish. This recipe thickens up some after you put it in the fridge to cool.
  2. Turn the medium low and bring the mix to a simmer. Add in the monk fruit/stevia, cinnamon, nutmeg, ginger, and cloves. You can also add the rum extract at this stage (it will taste like eggnog either way, the rum extract is there to make the recipe taste EXTRA eggnog-y).
  3. Stir and allow to simmer on low for about 5-7 minutes, stirring regularly.
  4. Remove from the heat and allow to cool for about 15 minutes before transferring to a heat-proof pitcher. Put in the fridge until chilled.
  5. Serve cold and topped with extra cinnamon and nutmeg.
  6. **Remember, this is a HEALTHY eggnog recipe, but it's still very rich, so pace yourself! 😉
