Broccoli Stir Fry with Egg

Ingredients

  • 1 tbsp unrefined oil (coconut oil, extra virgin olive oil, etc.)
  • 2 eggs
  • 1 medium size head of broccoli, cut into florets.
  • 1 green bell pepper, cut into small chunks
  • 1/2 tsp ground black pepper
  • 1/4 tsp paprika powder
  • 1/2 tsp garlic powder
  • Sea salt, to taste
  • 1 tbsp soy sauce

Instructions

  1. Heat the oil on medium heat in a medium to large size saucepan or wok.
  2. Once the oil is heated, swirl it around and then gently add the broccoli and pepper.
  3. Sprinkle in the spices and soy sauce and mix as well as possible. Cook for about 10 minutes, then add 1/4 cup of fresh water and cover the pot.
  4. Let the broccoli simmer for another 10 minutes, then stir and let them cook again for another 10 minutes (add a tiny bit more water if needed, the broccoli should NOT stick to the pan at any time).
  5. Crack the two eggs on top of the broccoli (crack directly into the pan, or whisk before pouring, your choice). Do not mix, allow to cook for about 5 minute with the lid on.
  6. After cooking for 5 minutes, stir the broccoli gently. Make sure to get all the egg well cooked, stir a few times to coat the broccoli and cook the egg (you'll need to stir about every 30 seconds to 1 minute).
  7. Serve warm with a side of rice.
