Broccoli Stir Fry with Egg
Ingredients
- 1 tbsp unrefined oil (coconut oil, extra virgin olive oil, etc.)
- 2 eggs
- 1 medium size head of broccoli, cut into florets.
- 1 green bell pepper, cut into small chunks
- 1/2 tsp ground black pepper
- 1/4 tsp paprika powder
- 1/2 tsp garlic powder
- Sea salt, to taste
- 1 tbsp soy sauce
Instructions
- Heat the oil on medium heat in a medium to large size saucepan or wok.
- Once the oil is heated, swirl it around and then gently add the broccoli and pepper.
- Sprinkle in the spices and soy sauce and mix as well as possible. Cook for about 10 minutes, then add 1/4 cup of fresh water and cover the pot.
- Let the broccoli simmer for another 10 minutes, then stir and let them cook again for another 10 minutes (add a tiny bit more water if needed, the broccoli should NOT stick to the pan at any time).
- Crack the two eggs on top of the broccoli (crack directly into the pan, or whisk before pouring, your choice). Do not mix, allow to cook for about 5 minute with the lid on.
- After cooking for 5 minutes, stir the broccoli gently. Make sure to get all the egg well cooked, stir a few times to coat the broccoli and cook the egg (you'll need to stir about every 30 seconds to 1 minute).
- Serve warm with a side of rice.
