I love broccoli stir fries! They’re so pretty and flavorful, but they’re also super healthy and easy to make. The best of all the worlds. This stir fry uses simple ingredients that are likely to be present in any kitchen.

Ingredients

  • 1 tbsp unrefined oil (coconut oil, extra virgin olive oil, etc.)
  • 1 medium size head of broccoli, cut into florets.
  • 1 green bell pepper, cut into small chunks
  • 1/2 tsp ground black pepper
  • 1/4 tsp paprika powder
  • 1/2 tsp garlic powder
  • Sea salt, to taste
  • 1 tbsp soy sauce
  • 1/2 tsp arrowroot powder + water

Instructions

  1. Heat the oil on medium heat in a medium to large size saucepan or wok.
  2. Once the oil is heated, swirl it around and then gently add the broccoli and pepper.
  3. Sprinkle in the spices and soy sauce and mix as well as possible. Cook for about 10 minutes, then add 1/4 cup of fresh water and cover the pot.
  4. Let the broccoli simmer for another 10 minutes, then stir and let them cook again for another 10 minutes (add a bit more water if needed, the broccoli should NOT stick to the pan at any time).
  5. When the broccoli is well cooked, add in the arrowroot powder mixed with water and stir well to coat the veggies. The sauce should be slightly sticky.
  6. Serve warm with a side of rice.
