Chocolate-Avocado Pudding – VEGAN and SUGAR-FREE
Chocolate-avocado pudding is one of the easiest and most flavorful desserts that I have in my repertoire. It’s the best of everything: healthy, fast, and decadent. Avocados are a source of all kinds of healthy fats, besides also being a good source of magnesium, vitamin K, vitamin E, potassium, vitamin C, and folate (among other nutrients). Even the pickiest of dessert lovers will have a hard time saying “no” to this chocolate pudding (if the person you’re feeding doesn’t like dessert at all though, in which case I’d recommend whipping up a curry instead).
Chocolate-Avocado Pudding – VEGAN and SUGAR-FREE
Ingredients
- 3 ripe avocados (soft to the touch, but still fully green on the insides)
- 1 tsp monk fruit powder
- 1/2 tsp Himalayan pink sea salt
- 1/2 cup cocoa powder (sugar-free, dark, should only have 1 ingredient)
- 1 cup non-dairy milk (soy, almond, oat, or coconut milks work the best for a creamy texture)
Instructions
- Put all ingredients in a food processor. Pulse to mix, then turn the food processor on for about 2 minutes or until the mixture is smooth. You may need to add more than 1 cup of milk if the mixture is particularly thick (this can happen if the avocados are larger than normal).
- Taste the pudding. Add more monk fruit for a sweeter pudding, or allow there to be less for a "dark chocolate" pudding.
- Best served chilled after allowing to set in the fridge for about 30 minutes (but you can eat this right away, too!).
