Fresh Guacamole

I eat guacamole almost every day for lunch! Sometimes, I’ll use it as a side during dinner too. Avocados have a ton of health benefits (and they’re delicious), so I try to eat some avocado every day. This guacamole is easy and light, and is best enjoyed with fresh tortillas. Of course, it can be eaten with tortilla chips as well, but I prefer to make little mini Guacamole Tacos. For those of you who are interested in going to Mexico, are planning a trip to Mexico, or are already in Mexico, take it from me that the fresh tortillas are THE BEST. Seriously, it doesn’t get any better than fresh tortillas. Especially when they’re combined with this guacamole recipe.

Fresh Guacamole


  • 3 Medium Avocados, ripe
  • 1 Clove of Garlic, minced
  • 1 Small or Medium Tomato, chopped
  • ½ Bell Pepper, finely chopped
  • ¼ Medium-Sized Onion, finely chopped
  • Fresh or Dried Cilantro (to taste)
  • 1 Jalepeño, finely chopped
  • ½ Lemon, juiced
  • ½ tsp Sea Salt
  • ½ tsp Black Pepper
  • 1 tsp Extra Virgin Olive Oil
  • 3-5 Stevia Drops OR ¼ tsp Stevia Powder (optional)


  1. 1. Cut avocados and remove meat into a medium sized bowl. Mash thoroughly with a fork.
  2. 2. Prepare cut garlic, jalapeño, tomato, and cilantro (if using fresh cilantro, otherwise add the dried cilantro with the other spices). Mix the vegetables into the mashed avocado.
  3. 3. Add lemon juice, olive oil, and stevia. Combine.
  4. 4. Finally, add dry spices and mix thoroughly. Enjoy with fresh tortillas.
