Fresh Pear Crisp

I’ve always loved crisps, cobblers, and crumbles. I can appreciate a good pie, but something about perfectly spiced fruit topped a decadent crumble really does it for me. Gluten-free, sugar-free, and vegan, this gluten free pear crisp recipe is the perfect mix of sweet, salty, and tart. I don’t bake this recipe like you’re supposed to do with a traditional crisp recipe, but rather I use a saucepan to cook the fruit and then I put the whole dessert in the fridge to set (like with many of my recipes). Of all the fresh pear recipes out there, a yummy pear crisp is my favorite!

Fresh Pear Crisp

Ingredients

    Pear Filling
  • 3 Pears, finely chopped
  • 1/4 Cup Oat Flour
  • 1 1/2 Tsp Agar Agar
  • 1/2 Tsp Sea Salt
  • 1 1/2 Cups Water
  • 1/2 Cup Non-Dairy Milk
  • 3 1/2 TBSP Coconut Oil
  • 1/2 Tsp Vanilla Extract
  • 2 Tsp Stevia Powder
  • 1/2 Tsp Camu Camu Powder (optional)
  • 1 Tsp Cinnamon
  • 1/4 Cup Raisins (golden raisins work best in the filling)
    Crisp Topping
  • 1 1/2 Cups Oat Flour
  • 1/2 Cup Oats
  • 1/4 - 1/2 Cup Raisins (golden or dark raisins are fine)
  • 1/2 Cup Sunflower Seeds
  • 1/2 Tsp Sea Salt
  • 1 Tsp Stevia Powder
  • 1/4 Tsp Cinnamon
  • 1/4 Cup Coconut Oil

Instructions

  1. 1. Chop the pears into medium-small pieces and put in a sauce pan with the rest of the ingredients for the filling (except agar agar and oat flour). Mix all the ingredients together. Add more liquid if needed to make sure the pears are covered.
  2. 2. Bring the pears to a boil over medium heat, then add the agar agar and oat flour. Be sure to sprinkle these two ingredients carefully over the boiling mixture to avoid clumping (agar agar doesn't usually clump, but this is a good rule of thumb either way to be safe). Stir well until the mixture thickens.
  3. 3. After the pear mix thickens, turn it down to low heat or simmer while preparing the crumble.
  4. 4. To prepare the crumble, first mix together the oats, oat flour, sea salt, stevia powder, and cinnamon in a medium-size bowl.
  5. 4. Cut the coconut oil into the dry ingredients to incorporate. This may take a bit of time, but make sure that the coconut oil and the dry ingredients ARE thoroughly incorporated before moving on (it may not look like enough coconut oil at first, but trust me, it's plenty).
  6. 5. Add the sunflower seeds and raisins to the mix and incorporate.
  7. 6. Pour the pear filling into an 8-inch pie pan, making sure that the filling is evenly spread out in the pan.
  8. 7. Sprinkle the crumble evenly over the top of the pear filling.
  9. 8. Place the pear crisp in the fridge for 45 minutes to set, then serve in slices.
