Creamy Coconut Rice

When I was much younger, one of my “go-to” healthy snacks was instant rice mixed with cinnamon and sugar. Although by no means healthy, at the time, that’s what healthy meant to me. Ever since, I’ve been trying to figure out how to make this childhood snack in a legitimately healthy and flavorful way. Below is my solution: Creamy Coconut Rice!

Creamy Coconut Rice

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: 1 1/2 Cups Creamy Coconut Rice


  • 1 1/4 Cup Brown Rice
  • Water (follow the directions on the bag for water:rice ratio)
  • 2 TBSP Coconut Oil
  • 2 tsp Coconut Butter
  • 2 TBSP Coconut Milk (or another non-dairy milk)
  • 1/4 tsp Himalayan Pink Sea Salt
  • 1 tsp Stevia Powder
  • 1/4 tsp Cinnamon Powder


  1. Cook the rice thoroughly according to the directions on your bag of brown rice.
  2. After cooking, drain any remaining water from the rice and add the remaining ingredients. Mix well.
  3. Serve warm right after cooking, or save in the fridge as a snack for later.


White rice can also be used in this recipe, but I'm using brown rice because of it's higher nutritional content.
