2 Ingredient Banana Pancakes

These are for when you have absolutely NOTHING to cook with, and you’re craving a sweet treat. In my experience, bananas and eggs are two staple foods that can be found just about anywhere in the world. And the true beauty of it is that they don’t necessarily require thorough cleaning like other foods sometimes do (although depending on where you are, you might want to clean ’em off anyway). Of course, you’ll need a frying pan and a stove top to make these. My family brings a hot plate and a small but complete pack of cooking pans made of titanium (they’re lighter that way) to the more third world countries we visit to make sure that we have what we need. In Dharamsala, we stayed in a small hotel room with no kitchen; thanks to our little pack ‘o cooking supplies, we were able to make fairly decen meals for ourselves. Had I known about this recipe then, I would’ve made some of these banana pancakes for us there!

So behold, the simplest, easiest, most accessible sweet treat ever known!

2 Ingredient Banana Pancakes

Yield: 9 Small-Medium Sized Pancakes

  • 1 Banana (somewhat ripe)
  • 1 Egg

  1. Thoroughly mash the banana with a fork.
  2. Add the egg. Mix with a fork or whisk.
  3. Spoon portions of the mixture into a frying pan or onto a skillet. Let each side of each pancake cook until golden brown.
  4. Don't forget, this recipe can easily be doubled or tripled depending on your needs!
