Ingredients

  • 1 Can Pumpkin
  • 3 Cups Rice Flour
  • 1 1/2 Cups Coconut Sugar
  • 2 Tsp Baking Soda
  • 1 Tsp Salt
  • 1/4 Tsp Cinnamon
  • 2/3 Cup Vegetable Oil
  • 2 Tsp Vanilla
  • 4 Eggs

Instructions

  1. Grease two bread pans.
  2. Preheat oven to 350 F.
  3. Mix all dry ingredients together in mixer.
  4. Add vegetable oil, vanilla, and eggs, and mix on medium speed.
  5. Add canned pumpkin, and allow to incorporate fully.
  6. Pour the mix evenly into the two bread pans.
  7. Put in oven, and allow bread loaves to bake for 40-50 minutes.
  8. Allow to cool, and then enjoy!
