Dinner Rolls

Cook Time: 40 minutes

Total Time: 1 hour, 25 minutes

Yield: 8 buns


  • 1 batch Bread Flour Mix (3 Cups)
  • 3 TBSP Coconut Sugar
  • 3 Tsp Yeast
  • 1 1/4 Tsp Salt
  • 1/4 Tsp Xanthan Gum
  • 1 1/4 Tsp Guar Gum
  • 2 eggs
  • 1 Cup Milk
  • 5 TBSP Butter


  1. Preheat oven to 350
  2. Prepare a baking sheet covered with parchment paper
  3. Mix together all dry ingredients in a mixing bowl. Let them incorporate while preparing the other ingredients.
  4. Warm the milk and 4 TBSP of butter in the microwave for 1 1/2 minutes.
  5. Slowly add the milk and butter mixture to the dry ingredient mixture, keeping the mixer on low speed.
  6. Add one egg to the mixture, and let it incorporate fully before adding the second egg.
  7. The dough at this point might be a little bit moist; let it mix for about 5 minutes to make sure it reaches a good consistency that you can mold.
  8. Take the dough out and place it on the baking sheet. Form the dough into one, round loaf.
  9. Carefully cut the loaf of dough into 8 equal pieces.
  10. Mold each of the 8 pieces of dough into the shape of a bun. Try to make the surface of the bun as smooth as possible (it may crack a bit).
  11. Melt the last tablespoon of butter in the microwave. Brush the top of each bun with the butter to keep them moist, and to keep them from cracking. (you can put herbs or other things in with the butter, too, if you'd like.)
  12. Let buns rise for 30 minutes.
  13. Bake buns for 30-40 minutes, or until the bottoms are browned but not burnt.
  14. Take out and let cool.
