Parsnip Bread

This parsnip bread can be used for a loaf of bread or muffins, and is a good healthy alternative to other types of muffins!

Parsnip Bread

Cook Time: 40 minutes

Yield: 1 Loaf

Ingredients

  • 1 1/12 Cup Rice Flour
  • 1/2 Cup Coconut Sugar
  • 1 1/2 TSP Baking Powder
  • 1/4 TSP Baking Soda
  • 1/4 TSP Salt
  • 2 Eggs
  • 1/3 Cup Buttermilk (1/3 Cup Coconut Milk, 1 1/2 TSP Vinegar)
  • 1/4 Cup Vegan Butter (softened)
  • 2 Parsnips (grated or cut into small cubes)

Instructions

  1. Mix all dry ingredients together in a mixing bowl
  2. Add eggs and buttermilk
  3. Add butter
  4. Add grated/cubed parsnips
