Parsnip Bread
This parsnip bread can be used for a loaf of bread or muffins, and is a good healthy alternative to other types of muffins!
Parsnip Bread
Ingredients
- 1 1/12 Cup Rice Flour
- 1/2 Cup Coconut Sugar
- 1 1/2 TSP Baking Powder
- 1/4 TSP Baking Soda
- 1/4 TSP Salt
- 2 Eggs
- 1/3 Cup Buttermilk (1/3 Cup Coconut Milk, 1 1/2 TSP Vinegar)
- 1/4 Cup Vegan Butter (softened)
- 2 Parsnips (grated or cut into small cubes)
Instructions
- Mix all dry ingredients together in a mixing bowl
- Add eggs and buttermilk
- Add butter
- Add grated/cubed parsnips
